CHICKEN CHEESY RICE

I love an easy crockpot recipe. I especially love it if it’s just something you can dump the ingredients in and forget about it. I love this recipe because it’s something even the pickiest of eaters will scarf down. This meal has a really boring look to it, but the taste is there. I add hot sauce to mine sometimes. It’s cheesy, savory, and filling. Not to mention low effort. It takes about 5 minutes to put together and another five minutes to mix towards the end. I hope you love it as much as I do!
INGREDIENTS
- 1 lb chicken breast or thighs
- 1 box of Zatarains yellow rice
- 1 can of cream of chicken soup
- 1 can of whole kernel corn
- 1 cup of shredded cheddar cheese
INSTRUCTIONS
- Place the chicken in the bottom of your crockpot. Dump the cream of chicken soup on top.
- Cook on low for 6 hours or high for 3.5 hours
- Shred the chicken (Mine usually falls apart)
- Add the box of rice and the can of corn with the liquid
- Mix well, top with cheese and put the lid back on for about 30 more minutes
Pro tip: Double this recipe for easy weekly meal prep! I make a big batch on Sundays and two of us have dinner that night plus I have an easy lunch for the week.
This easy crockpot recipe is really interchangeable. You can use a different kind of rice, a different cream of whatever soup, a different vegetable, or a different protein. Make it your own! This is one of my favorite low effort meals.
